海藻糖（Trehalose）是一种安全、可靠的天然糖类，1832年由Wiggers将其从黑麦的麦角菌中首次提取出来，随后的研究发现海藻糖在自然界中许多可食用动植物及微生物体内都广泛存在，如人们日常生活中食用的蘑菇类、海藻类、豆类、虾、面包、啤酒及酵母发酵食品中都有含量较高的海藻糖。
原理：
(trehalase)
(1) Trehalose + H2O → D-glucose
(hexokinase)
(2) D-Glucose + ATP → G-6-P + ADP
(glucose-6-phosphate dehydrogenase)
(3) G-6-P + NADP+ → gluconate-6-phosphate + NADPH + H+
