菜豆(Phaseolus vulgaris?L.)
菜豆是豆科菜豆属草本植物,茎上有柔毛;托叶披针形,小叶宽卵形或卵状菱形;小苞片卵形,有数条隆起的脉,大概与花萼一样长;花冠白色、黄色、紫堇色或红色;种子是长椭圆形或肾形,白色、褐色、蓝色或有花斑,种脐通常白色;荚果带状,稍弯曲;花期春夏。菜豆味甘、淡,性平。菜豆有滋补,解热,利尿,消肿等功效;对治疗水肿、脚气病有特殊疗效。食用菜豆必须煮熟煮透,消除不利因素,趋利避害,更好地发挥其营养效益。菜豆鲜嫩荚也可作蔬菜食用,还可脱水或制罐头。
