作W/O型食品乳化剂,可与小麦粉中的面筋结合,增加面筋的弹性和稳定性,使面团蓬松柔软。我国规定可用于面包和糕点,最大使用量2.0g/kg。

将乳酸在轻度减压下用100～110℃加热浓缩成重合乳酸,加硬脂酸和碳酸钙在惰性气体下于190～200℃进行酯化数小时,最后经冷却、固化、粉碎或轧片而成。
