Sotolone (Dimethylhydroxyfuranone) is a chiral aromatic compound with a distinctive aroma of caramel, curry, walnut and herbal-like scents. Sotolone can activate the human olfactory receptor OR8D1. Sotolone exhibits EC50 values of its S enantiomer and R enantiomer of 84.98 and 167.2 μM respectively. Sotolone exhibits moderate inhibitory activity against rice blast fungus[1][2].
